As I'm eating this tasty breakfast, I thought hmm.. I should blog about this. The consistency is not totally like oatmeal but it is darn near close and so good. So...if you have a whole 5 minutes in the morning to whip something up, this just might be a favorite.
Ingredients:
4 egg whites
1 cup of sugar free apple sauce or make your own using one large apple in the blender with no skin.
1-2 teaspoons of agave (depending on how sweet you like things)
1 tsp cinnamon. (I like cinnamon so I usually use close to 2 teaspoons)
Another variation, which gives the oatmeal more texture:
4 egg whites
1/2 cup of sugar free apple sauce
1 ripe banana
Handful of raisins
Handful of chopped walnuts (or nut of your choice)
1 tsp cinnamon
Directions:
Whisk all ingredients together in a bowl. Microwave for 1 minute, lightly stir. Microwave another minute, lightly stir. Microwave again for one minute, lightly stir. Keep repeating until oatmeal looks fluffy. Depending on your microwave cooking your oatmeal should take anywhere from three to 8 minutes.
