Cumin-Roasted Carrots


This dish has got to be one of the simplest recipes on ThePaleoPluge blog. Prep time is minimal. Cook time is approximately 20 minutes, which is enough time to complete Fran and Helen, back-to-back. Given the short list of ingredients, this dish is super-flavorful. If you are cumin fan, this recipe is for you.

Ingredients:
1 pounds of fresh carrots
½ teaspoon of cumin
¼ teaspoon of cinnamon
¼ teaspoon of salt
¼ teaspoon of pepper
1½ tablespoons of coconut oil (I used grass fed butter, which is paleo)
½ of a fresh squeezed lemon


Directions
Preheat oven to 400 degrees. Wash and peel carrots and cut carrots lengthwise (about ¼ inch thick). I bought pre-washed and peeled carrots from Ralphs. They look prettier.  Place carrots into a large bowl.

Next, mix cumin, cinnamon, salt, and pepper. Add coconut oil to the spice mix and microwave until coconut oil has melted. Mix well.

Pour mixture over carrots and toss until carrots are thoroughly coated. Lay out carrots, in a single layer, on baking sheet, lined with parchment paper and bake for approximately 20 min or tender. Remove from oven and squeeze fresh lemon over carrots.
